Chicken Osaka Dinner from Noodle Express

I {heart} Chicken Osaka from the Noodle Express in Spokane, WA.

 

I grew up in Spokane, WA and we used to go to a place called Noodle Express, which is owned by the Mustard Seed way too much.  My Favorite dish is the Chicken Osaka and I have been craving it FOREVER and finally found a recipe on line that is close.   I only have the chicken and sauce recipe.  One of the best things about Noodle Express is the Veggie Slaw that comes with it so I'm working on that.......

 This is an awesome mustard-y, Ginger-y chicken that is served over rice.....YUMMMMMMMMMY.


Chicken Osaka

Step 1: Make Ginger Dressing

1 cup vegetable oil
2 1/2 tablespoons ginger root, minced and peeled
1/2 rib celery, chopped
1/2 teaspoon sugar
1/4 cup sesame seeds, toasted
1/8 teaspoon celery seed
1/2 teaspoon ketchup
Pinch white pepper
1/4 cup chopped onion
1/3 cup soy sauce
1/3 cup distilled white vinegar

Using a blender, combine all ingredients except the soy sauce and vinegar. Blend for 30 seconds. Then add the soy sauce and vinegar and blend for 30 more seconds. Store in the refrigerator for up to a month.

Step 2: Cook the chicken

1 1/2 pounds chicken, cut into bite-size pieces
3 tablespoons vegetable oil
2 to 3 slices fresh ginger, minced
½ lemon, juiced and zested

Chop up your chicken into bite sized pieces. Heat up your wok or if you do not have a wok use a deep pan. Add your 3 Tablespoons of vegetable oil. When the oil just starts to smoke add chicken, lemon juice, zest and ginger. Get the chicken slightly browned then add the Ginger Dressing just enough to coat. Heat through. *You can add more ginger dressing if you like, just don't overheat or sauce will break*

Step 3: Make the mustard dipping sauce

3 tablespoons Kikkoman soy sauce
1/2 cup fresh lemon juice
2 tablespoons Coleman’s Mustard (Its a powder, I used regular mustard powder)
3 tablespoons sugar
2 tablespoons sesame oil
2 tablespoons white vinegar
1/3 cup vegetable oil

To make the dipping sauce, blend all ingredients until smooth. Pour sauce into small bowl and serve with chicken, steamed rice ( this is great with brown rice), and veggie slaw.   Dip or pour over meal.

Step 4: Asian Veggie Slaw
1 Cucumber, cut in half lengthwise and sliced thin
4 Cups of shredded green cabbage
1 carrot shredded (or use a cabbage mix with carrot)
4 Celery stalks thinly sliced 

Mix together in bowl and add 1/4-1/2 cup of ginger dressing to taste to coat slaw.   Add to bowl with rice and chicken. ( I LOVE to put TONS of slaw on mine for crunch!)

This was SOOOOOOOO GOOD! Now I just need the recipe for the veggie slaw that they serve at noodle express and WA-LA! PERFECTION!

Thank you for this recipe, I have been looking for a good one since I moved away from Spokane last year. I LOVE Chicken Osaka! Please post if you figure out the recipe for the veggie slaw, I miss it so and I haven't been able to unravel that mystery! :)

Dressing for the Asian Slaw

2 teaspoons black pepper
2/3 cup salt
1/2 cup dijon mustard
1 2/3 cup white sugar
2/3 cup toasted seseame seeds
2 tablespoons seseame oil
6 2/3 cups Canola oil
5 1/3 cup white vinegar

This makes a lot, but you can reduce it down. Enjoy-----Joe.

Regarding the recipe for the asian slaw dressing..you will need to blend all ingredients at very high speed for 30 seconds or so.....this will liquify the seseame seeds and give it the desired flavor. Joe.

What a beautiful blog! thanks for taking the time to post this. My kids have loved chicken osaka since they were practically born. I usually go buy the sauce but I'm hoping now I don't have to!

I LOVE LOVE LOVE Chicken Osaka but living in SoCAL makes it difficult to obtain! I have to admit, I've made my in-laws pre-order a gallon of the sauce and bring it with them when they come visit, more than once, okay, maybe everytime they come visit...
I have a very old recipe that was published in the paper over 15 years ago, but it's not 100% right. I've looked online for years and all of a sudden (in the last 2 years) there are a couple of different recipes out there. Yours is different and I'm going to give it a try next time I make it. But really I just need a Noodle Express fix, guess it's time to go visit family!
